Using the TMS FMX RichEdit demo the save button saves to plain text no matter what format you choose in the save as dialog's "save as type".
We've seen there is an issue in the FireMonkey SaveDialog. We've fixed this meanwhile with a workaround and the next update will address this.
As a workaround for now with the current release, directly call TMSFMXRichEditor.SaveToFile()
