Is there a way to convert a proyect from Firebird 2 to Firebird 3.

Hi,

Yes, just create a conversion map from FB2 to FB3 (Tools | Conversion Maps) and then use convert tool (Tools | Convert) to convert from FB2 to FB3 using the newly created conversion map.
